Lacinato Kale with Caramelized Onions
Ingredients
Extra virgin olive oil
1 large organic onion, thinly sliced
2-4 cloves organic garlic, thinly sliced
1 bunch Amy’s organic Lacinato kale, middle stems removed, leaves coarsely chopped
3/4 cup vegetable or chicken stock (you may use water if stock is unavailable)
salt and crushed red pepper flakes
Directions
In a large sauté pan, over low to medium heat, add enough olive oil to coat the bottom of the pan; when hot, add onion and cook slowly until onions are soft, lightly browned and sufficiently caramelized (10-15 minutes). Add the garlic and cook until fragrant (1-2 minutes), then raise the heat to medium-high and add the kale to the pan. Add stock or water, and salt and red pepper to taste; cook, stirring, until the kale is tender. Serve immediately.
